Restoration and possible upgrade of a old Ideor bike

Hello everyone,

Last summer I "found" the bike that used to belong to my mum's cousin. In the sense that I've always known where it was, but only last summer I took the time to get it out and clean it up. It's in very good conditions, mechanically, but as it stands it's hardly usable on narrow montain roads. It's got a 3 speed groupset, which make it more suitable for gentle strolling in the flatland than going up and down roads averaging 10% gradient.

As I only have MTB at my parents' place, I was thinking to turn this into a road bike. The only problem I see is that it has 115mm rear spacing. I prbably could stretch it to 130mm, but I am not sure it would turn out to be a good job.
I could save some mm putting a vintage 5 speed freewheel, but would that be worth?
I also thought to leave the rear as it stands and jkust put a triple chainset. 9 speed is not too shabby...
It would look pretty funny, but I don't care. Function over looks here :)

Any suggestions?
