Orange Clockwork questions.

Hi, in the process of building a 90’ Clockwork on a budget, what’s the biggest tyre I can get away with on my original Mavic rims and original Orange forks? Also can I run a 7 Speed cassette with an XT RD M737 derailleur I found in the garage?

I have 2.1 Smokes on mine without a problem. The the mech should be fine especially if you are using thumbies.
