Mature cheeses can get a build up of salt crystals - that is the crunch I believe.

God I miss cheese, 3 years now since I had any proper cheese - severely lactose intolerant now, has anyone tried Cheesly? that's all I can have now, made from potatoes and toe scrapings I think.
 
Nope nothing good - not a big fan of blue though - even goats cheese gave me cramps - If I eat high lactose cheese it is like getting a chainsaw in the gut shortly followed by the sound of an elephant pissing.

I have been trialling different cheese over the last few months and so far I can have tesco value cheese slices and Aldi's smoked bavarian cheese slices - the latter being quite nice but it doesn't melt.

The trials are slow though as I can't afford to be off work with self induced illness.

On doctors advice I was 100% milk product free for 8 months but that hasn't improved things, I think it was just a ruse to get me used to not having milk though :)
 
TUC biscuits ,bit of cheddar (or danish blue (cheese)) and some mango chutney

I will gladly send you my toe nail clippings so you get to smell the cheese you long for.
 
Cheers Reki, but I am allowed to smell cheese - it's eating it I have issues with and I refuse to eat anyone (elses) toe cheese.

Yep, chutneys and cheese is a great combo.

Got to love the crunch of a decent Cornish salty cheddar. I know what I'm having later...
