make sure you tell them its no liability to you and is strictly casual (but you are good!)
cant suggest much as most has been mentioned
but
what about doing a free assesment
i.e 'can you fix my bike at lunch' 'no but i can come and assess it today and fix it tomorrow' (or that day if your sure you have the time)
a loaner is a good option as suggested
but like i said - do it as a 'friend' for cheap(er)
remember if you go ahead with it to leave yourself enough time for lunch aswell!
maybe you could take their bike home and do it of an evening if it would take to long (if you didnt mind that is) as i cant see every problem being fixed within a lunch time
also, maybe strip one of your bikes (and time each bit) and then put it back together again (and time that too), to see how long you actually take for things
planning will help you lots it seems
