Matt. Have you asked Cyclewise at Whinlatter? Rich Martin and Craig Scott are the guys who set the company up a few years ago and I can highly recommend them and their team as skills coaches and instructors.

I'm sure they could either formulate a training plan for you, or point you in the right direction of a specialist cycling coach.

Failing that, I think there is a list of registered cycle coaches on the British Cycling website.
 
Thanks all, really appreciate all the advice. I'll follow up on them and report back on how I get on. Just seem to have plateaud and want to push on a bit more.
