Just done tempura for the first time

Got a wheat intolerant sprogget and someone brought a bag of rice flour round during the week so.. quick google and tempura batter is easy..

Mixed the batter (flour, water and egg yolk), rested it for an hour, sliced some fish, dunked fish first in batter then in hot oil for a few mins.

Everyone liked it but all said it was 'missing something'..

Anyone offer some (helpful) tips as to variations on the theme to keep the horde happy?
 
Yeah, all that seasoning malarky, but also mix it up with tempura'd vegetables too.... :wink:

I lived on the stuff when I was out in Japan, VERRRY yummy... and king prawns were one of my favourites...
 
Use beer instead of fizzy water....it adds some flavour to it,but imo tempura is better than flour it goes crispier 8)
 
No beer . . . very rarely have any alcohol in the house (next lot should be in about 9 weeks-ish)..

Was wondering about finely chopped chilli in there..

K (Wife) wondered about lemon juice in the batter..

Prawns would be ace I reckon.. the fish was nice but wasn't very tasty, don't even know what it was.. 4 packs of frozen fish were donated to my freezer in the week.
 
Chilli and chives is great in batter ian,you can even add a touch of vinegar or lemon juice....it is all good :D
 
It's that rare to find something (that's healthy) that the whole gang like I'm a little.. excited.. don't think it's happened before (everyone liking something. I used to get excited all the time - usually in the run up to some surgery)..
 
A little White wine vinegar in the batter works well. Also tried making it with Ginger beer which works quite well.

Also you could try serving it with Chillie Jam which is easy to make.
