How many 'starters' how many 'main' etc

Personally, I feel excited when I arrive at a restaurant and I don't know how many starters they'll have. It shows they care if there's something different each time.

I think 3 starters is enough.

The numbers seem about right for each course, too little choice seems like you're not trying and too much choice confuses people, plus might make people think that the food isn't necessarily fresh....

I think harry is building a wine list - not a menu, is that right Harry?

And Harry, please recommend some good bottled beers too, a range of weights - nothing worse than a nice meal with stella or millar being the only choices. When my wife is driving I prefer to drink beer and a nice IPA usually goes with most of what I order.
