Help me choose the right brakes for my Dawes Galaxy.

Although it can mean you struggle to get a chubby tyre out.
The original brakes are superior to the ones currently fitted, and will work better, as well as look better😃

Any component maxed out to deal with a technical incompatibility makes me wince.
Like a m700 derailleur with a longer b- screw fitted to get it over a 40t cassette for one-by🤮
 
You can use a narrower pad like aztec control block
But leaving aside the boss width/ rim width issue,
- an additional problem is when the bike was built for 27/630 and now has 700/622.

In this case, about the only decent cantilever is the shimano "rabbit ears" like these br-m500sView attachment 973265
Although the dearly beloved Brat-fifty (br-at50) can get pretty low.

But they do stick out a way.
Although this style has made a comeback, I think it was previously (almost) abandoned due to heel and pannier interference.
I've seen a number of people run the BRAT-50 style on the front and the BRM500 style on the rear to limit heel interference. I've happily used the BRM500 style on my vintage Miyata touring bike quite happily (as an upgrade to the BRAT 50 which were broken), although I'm trying out vbrakes at the moment hoping for a little bit more wet weather braking power.
