In fact, leave it in the wheel and use the wheel for leverage and sighting.
 
"over sensitive" systems Ive had are usually the result of something else not being right. Couple of examples are, the upper pivot bolt (the one that screws into the dropout) was seized meaning the mech wasnt pivoting properly. A disassemble and cleanup got it going again.
And that small bit of outercasing from chainstay to mech can become clogged up leaving the indexing iffy. Replacing this cured it.
 
I tried everything ... and I mean everything! Renewed all cables and casings, three different mechs, two different shifters, re-routing cables and even replacing the floating jockey wheel with a rigid one.

However, B-I-G 'thank you' to Nick (elite504) for letting me pop around to his place and watching him patiently align the hanger. It was slightly out but now sorted and a good place to start from.
