Fitting new brake and gear levers

Is it possible to just take the cable out of the old ones and put them in the new ones? I have just got some NOS Shimano DX rapidfire plus shifter/brake levers and want to replace the old 500LX rapidfire ones.

You will need to disconnect the gear cables from the mechs and completely pull them out at the shifter
You should be able to get enough slack on the brake cables to just rethread them at the brake levers
