do any modern fork manufacturers cater for 1 inch steerers?

You could still buy pace and marzocchi with 1" forks up until around 2005. That era pace rc39's are comparable with modern forks so if you can find some that is the correct answer. 8)
 
The RC36 Stealth was sold with 1" steerer and disc tabs. 80 or 100mm travel. First version (about 2002 had no lock-out, but 2002 onwards did. Steerer bonded in so have a word with Tim at ForkEnglish incase you come across the wrong size and need a swap, he sorted mine from 1" to 11/8th. Really under-rated forks, plush with good grease-ports, and still in regular use.

I think Marzocchi produced minimum 3 types of crowns for all the forks in the 90's (XCR, DH3, XC700, XC600, XC500, XC50, XC51, XC400, XC300 ....)

- pressed in 1 1/8" steerer
- clamped 1 1/8" steerer
- clamped 1 1/4" steerer

You can use all clamped version to put a 1" steerer in by using shims.

I'm not sure about pressed in 1 1/4" steerer ... I think I have not seen one in my boxes ...?

What do you mean? Because of the steerer or because of (older) fork quality? What are you searching for?

Because modern forks are now tapered from 11/8 to 11/5
