Wanted Disc brakes + Red hope

I'm looking at changing the disc brakes on my dad's ebike as they are absolute junk. I've bled them a few times, change the pads, the rotors and they still stop like cheese.

So does anyone have a nice disc brake set? Ideally with rotors but not the end of the world if not.

Shimano xt would be great, but open to other suggestions. Hoses probably need to be quite long

Also after a red hope headset - 1 1/8 ahead

Ive a new set of hope tech 3 e4 in purple. One is built but not added any fluid, the other is not. Got them in their constituent parts to build up, but things have changed and they've sat there since. Complete with hope floaters in purple 180/160
