I bet that Gitane had Campagnolo lever bosses. They are notorious for causing that down tube failure - they create a stress raiser at the corners.
Cantilever brakes can be very powerful but they need a good lever as well as a good setup. Unfortunately I've never been able to get really good cantilever braking with any road levers, although they can be made acceptable with decent pads. The old DX 4-finger levers for flat bars, on the other hand, give you brakes that work almost as well as discs.

I'm kind off wishing I rode it for a while before striping and re-painting it
to iron out any problems with the brakes/gears etc but it's too late now! The Gitane is still built up so I'm hoping to do a side by side strip - re buuld, without any problems!
Then I'm hoping to use it every day to and from work with out any problems!

That's some lovely work and I bet you're not going to want to get it dirty when it's built up.I'll never make a surgeon so I'm always jealous of anyone who has your level of skill with a brush and I metaphorically doff my cap to you sir.
If you want to cheat with the lug lining though I found earlier in the year that the better quality metallic markers from people like Sharpie work very well as lug lining pens, you can't lacquer over it as the lacquer dilutes the paint/ink so on the one frame I tried it on I applied it both over and under the top coat of lacquer.
