Should there be a split in the crown race ?

Nope. Kills your bearings and puts your steerer into one position. Not good.

Thought as much ! the cut is very neat and fine doesn't look like it was done by a hacksaw

This came off the bike originally, the NOS 1" XT crown race has no split and currently doesn't fit might require a bit of fettling to get it on

The race that doesn't for could be a different size to the forks your trying to put it on.

1" Deore 1989, that was on their when I got it , the bearings were really smooth tho ?

In a race, they weren't excessively worn either, but they or the headset were not destined to be used again !

I assume a caged race.

Anyway check the diameter of the steerer tube. There are two specification.
You may be trying to get a 26.4 onto a 27.0.
