Anybody know - Can I use a 1995 C record chainset with the modern 9 or 10 speed stuff?

Yes and no....

It won't work well with either.

But you can live with the noise from the chain, then you can.....

I couldn't, so I stopped.

You could put some new chainrings on though, and it'd solve the noise issue in 9-speed.

Wouldn't recommend running 10-speed though.

ON THE OTHER HAND....

I "just happen" to have a 10-speed record chainset and bottom bracket going spare, if it's worth my while... (not particularly short of space/cash)....

Thanks for your reply - I assume the chain noise is from different profile chain ring teeth - narrower? Or is the offset of the chain rings in relation to the block different?

Is it possible to get hold of new 8 speed stuff still?

It's the chainring profile that's the problem. Changing them eliminated the noise in my system. Offset is only a problem if you use the wrong BB.
