SRAM PG-950 9-speed cassettes have separate cogs. Shimano Tiagra 10-speed cassettes do too.

Best thing to do is hit eBay where you can bring up lots of pics of the cassettes and browse which ones have separate cogs. Someone usually has a pic of the back of the cassette.

Big frames are very flexy - this is normal.

...and the small ones are not! Mine's a 52cm and I was surprised how un-flexy it is!
