Benotto 3000 resto mod

I’ve as good as finished the Benotto 3000 rebuild. I’ve used Cinelli bars and quill stem, spread the rear to 130 mm and installed a Sram Force 1 groupset. The test ride was great till the last mile when the rear wheel slipped and started rubbing the stay. I’ve ch the skewers to the old type enclosed campy ones but now I need to reset the gearing. How can I stop this happening on the old horizontal rear dropouts? Every time I loosen the skewers the wheel goes out of line and needs aligning. It’s a nightmare.
