I have a couple but desperately need a change from them so do you have a favourite recipe you just cannot live without.

Its all in the spice. I roast and grind my own; that really makes a difference. One of the best books I have is 50 Great Curries of India by Camellia Panjabi.

Use boned thigh meat (giggidy giggidy) as it has better flavour.

One of the reviews for this book says the recipes are challenging do you think so?

There are long lists of ingredients but a lot of them are the spices. I have over 300 recipe books, I will look later to see what's out there. I have a standard mix I use which I vary the percentages of various spices depending on the result I want. It also pays to know the strength of the chillies you use.

Presume he means with the bones IN.

Don't debone it - the bone adds so much more flavour.

I was an expert at making curries but now we have a local curry house that is at a level I will just never attain (IMHO the best place in Denmark and I've only ever had a better curry at Chutney Mary in London). I've more or less given up on Indian home cooking.

Yup, I have this, very good book. Some of the recipes are a little demanding, but a bit of practice and they will come out well. Alas, mine all look the same when I cook them and dont taste too different, just really nice :wink:
 
If only we had some sort of internet based system whereby we could search for such information, somehow giving access to all the recipes people might have placed in the public domain, in order to satisfy such a query.

It will happen some day, it will I say!

If you want a change how about Malay/Chinese fusion?

I have a very nice recipe for Delhi Chicken Curry

It uses loads of fresh ginger, lemon juice & tomato's

It's a mild/medium curry, but has soo much flavour, it's got a hint of sweet and sour with the tomato & lemon

I've not found a similar recipe online so if you're interested I'll have to type it up or take a pic of the page in the book for you
