9 to 7 speed conversion - shifter options

Meant to type 9 speed chain. Would it create chainsuck due to being narrower and the chainwheels fatter?

Rarely. Have been using a 9spd chain on M730 chainset without issues and a 9spd on an ancient 6spd set up for about 4 years.

What LGF said. I'm using 9 speed chains on both my 7 speed bikes, no problems whatsoever. There's only 0.05 - 0.07mm difference in the width of a 9 speed cassette sprocket/chainring and a 6/7/8 speed.

You don't need to modify a 9sp hub to accept 7sp, just bob a spacer on...

If you want 7 speed Paul components make the best tumbies. They are friction thumbies too. I like friction shifting. I would also fit a 8 speed cassette but I would go the friction shifter route. Mayu not be cheapest option though.

I can't find Paul thumb shifters anywhere, just the adaptors. Might be an idea though.
