8 Speed cassette on 7 speed hub?

Yup, thats an old freehub body as it has the threaded part for the Uniglide cassettes

Re:

Please excuse my ignorance and lack of knowledge  .... So what I have here is a 7-Speed Uniglide freehub with a Hyperglide 7-speed cassette, on a 9-Speed (original) Hub?

You have the middle one from the picture

7spd Hyperglide with a thread to make it Uniglide compatable. These freehubs disappeared around the early 1990's

The Hub is from around 1997 onward.

Re:

So, to save confusion as well as returns... Am I best taking the freehub off the Shimano Hub and selling the cassette and freehub separately?

I've got a nice unused XT M750 hub going spare...

Please don't confuse me any more, my brain hurts enough

Seriously though, thanks a lot for all the advice

I wouldn't sell the hub as is, except as a "spares or repair". There's something not right about the rubber seal (it's not seated properly in the hub shell) that makes me suspect the internal parts aren't right either. Because not all cones and dustcaps are compatible, I suspect the inner dustcap on the non-drive side of the hub has been removed. That means the seal has nothing to seat against.

Personally, I'd strip it down and keep the parts for a rainy day. It's not worth more than a few quid as it is.
