3 Cheaps steel bikes....what to do?

I've recently acquired three low end bike/projects.
Ive got a Peugeot Performance 300 in great nick and complete that fits.
A Giant Peloton Lite, that's an easy restoration, but too big.
And a Raleigh Pioneer Venture GT, which isn't much more than a frame. And this also fits.

For now I've hung them up, but keep thinking about them and the way to go.
The Peugeot is lovely and has been indoors unused since about 1995.
But it's the Pioneer that interests me. It's a 501 and has 130mm spacing and canti bosses. I'm tempted to put a low end Campag groupset on it or Shim/SRAM 10 speed with bar end shifters (no brazings for DT shifter...or bottle bosses?)

How would you go?
 
Get rid of the Giant if it’s too big, it’ll just become an expensive project which will be too big to ride.

I think the raleigh pioneer is a town bike hence no need for a bottle. And it would have come with flat bars (sit up and beg, rather than mtb straight bars), with gear shifers on the bars.

If it were mine, I'd look to reinstate the town bike commuter look and keep it useful and simple
So upright bars and stem, single chainring, no more than 8 gears, spaced widely, mudguards, big tyres and a front rack and basket
