If the existing stud doesn't unscrew, could you file off what is remaining, then drill and tap it to take a threaded stud?

Yep filing and drilling would do, however I have another problem -- the remaining stud and bed is twisted inward. I think the whole frame is twisted, just barely, but it would put the stuff way off. I'd be afraid to attempt to twist back to normal as it might crack... I'm putting this project on hold now.

it's a steel frame, tough as old boots, go for it.

Also, a little misalignment on a canti stud is no big deal, Cantis are adjustable for a reason
