How come chains are more likely to come off with a single chainring?

My old Lava Dome has 21 gears and I'm thinking of simplifying it down to 7 gears. How do I go about getting the spacing right for the chainring, and can anyone suggest some good ratios for a 7 speeder?

Ended up getting a Ridgeback MX20 for £80 second hand. I would have prefered it not to have suspension forks but it was a good price. The Kona Makena looks awesome.

My 7 year old daughter has a Ridgeback MX16 but it's starting to get too small for her. Can anyone recommend a slightly larger bike? I like the look of the Islabikes Beinn 20 but I'm not sure she's ready for gears yet.

I have a 1991 Kona and there is a lot of play in the bottom bracket area. What tools do I need to taken the cranks and bottom bracket apart and regrease and tighten? I dont have a bike tool kit.

I noticed today there is quite a bit of play in the bottom bracket of my 91 Lava Dome. It is the original bottom bracket, is it best to just service it or fit a new one?

Looks like I need a special tool to undo the cone nut.
