I’ve got a couple of options for you.
A 2008 Sunday September titanium frame with Shimano 105 5700 10-speed groupset and new Mavic CXP Elite wheels. Carbon forks and seatpost. I believe it was billed as a fast audax bike when it was released.
56cm frame with plenty of fork steerer; should be about right for just under 6’. Clearance and eyelets for mudguards and a rack. £500, pedals not included.
I’ve also got a 56cm 2014 Genesis Croix de Fer 931 stainless steel frame with carbon forks, Hope headset, Shimano 105 11-speed 5800 groupset, Hope hubs / Open Pro rims, TRP disc brakes. Currently set up as a tourer with Marathon Plus tyres and mudguards but can happily swap out the tyres for something a little more sprightly. £950
