UK/ European made off the peg Steel hardtails

So I'm saving up for a modern Hardtrail, something more the xc/ bikepacking end, that can handle trails that are at least what you'd find in a modern XC course (so a bit of jumping, drop-offs and rocks and roots).

I'd prefer a higher end steel, though I get modern bikes are heavier than some of our retro bikes. But ideally looking at 853 or equivalent.

I also really want to go 27.5", since I'm 5'8. My son has a 29er and I've borrowed and tested 29ers. I also have borrowed a 27.5" quiet regularly and ridden a 27.5+. I prefer the smaller wheel size. I don't really wanna turn the thread into a debate over that.

Currently considering:

* Cotic Solaris, though Cotic have said even with a 27.5+" they'd recomend shorter than usual cranks, since the bb has been lowered inline with it being designed for 29"

*Pace 429, awaiting a reply on running this with 27.5 wheels. Have also read about squeely disks on the back if you run a large rotor?

^^ both of these made by Fort in Czechia, a brand I'm aware of from my bike messenger days^^

* Mason Raw. Quite a bit more than the above, but based locally- though frames are made by Five Lands (and rest of the range by Deddaci). Seems to be more aimed at long distance bikepacking racing and not asked yet if can handle harder trail riding or if can run 27.5"

Any further UK/ European made suggestions? I'm well aware that there's some amazing Taiwanese frame builders or companies such as Ritchey that own their own factories in Taiwan. It's an economic (though not in terms of saving money) not an engineering choice.

Note: I didn't make this clear at first, but sadly custom build is out of budget right now.

Also would be looking to run between 100- 130mm front sus.

Just to be clear and I didn't mention this in the initial post orginally.

I can't afford custom right now. But I would consider paying more for off the peg from a smaller builder?

Did Ted James used to be known as Super Ted? I know he was a superb mechanic if it's the same person (looks to be) and is no doubt a great mechanic.

Does he do an off the peg hardtail?
