What replacement sprocket/cassette for early 1990s 7-speed

Hello from a new member - currently in the process of rebuilding a 1991 Beara hardtail custom racing (hand built cro-mo, made in Ireland) frameset with M730/732 XT components.

Just wondering, seeing as it's generally accepted as good practice to replace the sprocket cassette along with a new chain, which replacement 7 speed one people are using? I can see the Shimano HG40/HG71 widely available, but what kind of quality are these and are there any other recommendations?

The last time I did a retro build I purchased a custom sprocket set from Harris Cyclery, sadly no longer around.

For 7 speed I tend to use SRAM cassettes as they seem to work well and are readily available at a reasonable price
 
Shimano 11-28 7 speed CS-HG41-7 is my go to, very light also at 225g. I use KMC Z51 (6, 7, 8 speed) chain

Both very reasonably priced, most of my stable is 7 speed

So it looks like two good options are:

SRAM - 12-32t

Shimano - 11-28t
