I’ve recently acquired a nice set of wheels for a build. My intention was originally to use these on another bike and steal the ones from that bike. However I feel these will work well on the current build.

My issue is the wheels have coloured nipples which I need to replace to silver.

I realise there are different sizes and widths.

The spokes measure 2mm. Does this mean they are 14g?

My plan as a none wheel builder is to remove one by one and true the wheel each time. Will this work?
 
You can replace the nips one by one for sure.
Use dt brass, and a red rixen Spokey, bought from a bike shop not amazon😉.
And use a consistent amount of oil or grease on the spoke threads.
There's a chance though when you creak the wheel flat on the ground, there will be a little settling and it will need some more truing.

It's not quantum mechanics though.
Despite what the self-styled kings of wheelbuilding tell you🙉
 
To be fair it won’t be ridden so shouldn’t be an issue.
If it’s not a rider, and is for display only then I’d just lace them up the best you can. Doesn’t need to be tight (or even that true)

In that case swapping the nipples one by one, or in groups sounds sensible.
 
unless in time you forget they are show only and sell them on or fit them to another bike and go for a ride and wonder why they are going a bit wibbly wobbly or that eyelets are lifting from the rim
