Vittoria have got some good 700c tyres in tan wall, 27" is a bit trickier but panaracer have some.
 
I am just putting up my updated pics. I have gone for the Vittoria Corsa tyres now which has improved the look greatly (thanks for the input!). The tyres are great and the bike does feel very quick now and goes well

Amazing how much more awesome it looks with those lovely tan walled tyres on there, given that it was already extremely awesome. Although of course you'll have to bear heartbreaking witness to brake dust slowly making them all manky and mucky :(

I'm in throes of renovating a not-too-dissimilar 1971 Pro. I've gone back to the catalogue to dress it with old Campag Record, sprints and tubs, Brooks saddle etc.
 
Lovely looking bike and proportions hugely improved with lowering the stem.

Now just need to line up the tyre logos with the valves......

Haha it always amazes me the eye to detail people on this forum have. The stem was annoying me as for some reason it could not go any lower and the proportions looked off for me! Not sure if the stem was slightly warped or what it was but I bought a replacement that fixed the issue!!
