So chilli con carne - fabulous - a big old pot of it - bubbling......

But you have some left the next day - what do you do with it?
You could do Dirty Nachos - but then you spend the next who knows how long wiping it off your chin, your
shirt and your sofa.

So gentle-folk of Retrobike - I give you Dirty Nacho Pizza !!

Take your pizza base and gently coat it with just enough of last night's chilli.
Sliced onion and red pepper is optional at this point.
That bag of tortilla chips - grab em and scrunch em on top of the chilli
Some Pepperdew zingy peppers
Some grated cheese
And then a few delicate scoops of spicy Nduja sausage....
Slam it in the oven

Dear lord, filthy!

I make a point of trying the chilli con carne in every establishment that offers it. Everyone has a slightly different take. Great.
 
My chilli is actually vegan. Haven’t made a beef chilli in years.
Next time I do this pizza, I’m using vegan Sheese and vegan Nduja
 
I think Quorn contains mushroom - and someone has a mushroom allergy,
So kidney beans, black beans and green lentils 👍
 
I do it in my one pot / pressure king pro.

A tip - always cook off the tomato puree and spices (cumin, chili) in a medium heat fry pan, and deglaze with a cup of red wine as this gets rid of the bitterness. I also recommend San Marzano tinned tomatoes as these give amazing flavor.

I find a chunk of dark chocolate helps too.
 
Not if there's someone with a chocolate allergy :(
I do however stir in a spoon of black treacle.

I tend to go for Mutti tomatoes if I'm doing something more subtle - but any ole tommy-ato will do me for chilli.
