Fantastic job. Don't beat yourself up over the 'tweeking'. There won't be many people out there that will have restored a bike and got every detail right first time. Just come back to stare at this some more, incredible beast! How is it looking now? I'm with the majority in thinking black bar tape with those gold Cinelli plugs, and predominantly black Nokon with smaller sections of gold.

Looking forward to seeing more pics as you refine it
