2) Build with spares I have (v-brakes, riser bars, single speed), see how it rides like that.

Moment of madness over. Normality is restored I must have used some bits I thought I had on other bikes.
I'll just nick the group from my Kona and put it on the Clockwork.
Its just "stuff" and can be put back on the Kona if I find the Clockwork is too small/boring/Not for me (unlikely, but you never know ).

What seatpost dismeter do these take? Tried a 27.2, too big. Tried the one from the Kona (Not sure of size tbh) and it's too small...

Usually 26.8mm. Should have a spare if you need one.
