The slick tyres can look a little out of proportion.The one on the left is a Continental Grand Prix and the one on the right is a Fatboy

City Jets have profile, the OP mentions that he wants full bald.

Not so sure about Hanks either. I own a set of 2.2" Hanks, and whilst being as grippy as superglue, they do have a lot of rolling resistance no matter how many PSI I run them at. Not so much a problem if you don't plan to ride a lot at high speed.
Something about the first post tells me that this bike will be a high-speed tourer rather than an urban assault vehicle, so you'll be looking for slightly harder compounds.
 
Has to be the Continentals if you want speed,noticeably faster than Fatboys,mine weighed just over 200gms.You need rims with internal width of 17mm or less according to Sheldon,I use Sthenos.
 
I've got Specialized Pro on my ss; 26 x 1.00 at 120 psi, have a slight tread on sides, they are few years old as were on wife's "road" wheels not getting used, definitely quicker than city jets and Specialized nimbus both of which ridden a fair bit.
