XTR disc brakes and Hope hubs

I am looking at replacing my XTR 969 wheelset with a set of hope wheels. Can i still use the XTR brakes

Do I need to use hope or shimano discs

that depends on if your discs are centre lock or 6bolt fitting?
if 6 bolt then yes
if centre locks them yes with adapters
either make of disc will work chap

how about the disc thickness

disc thickness will be the same chap unless you get the hope vented then they wont fit
