What brakes and levers ?

I once transfered a Shimano groupset off a mountain bike onto a road frame with flat bar. Fitted road calipers instead of the v-brakes and they worked fine. I used the mtb rear derailleur to be sure the shifters would work, but I think I could have used a road derailleur. 3x7 gear shift/brake lever sets are cheap enough on ebay.

No they don't. The pull ratio is totally different, and this is insane and dangerous advice.

Put V-Brake levers on a road caliper and you'll end up with brake levers that move about five degrees total but need superman strength to actually stop you. I have to question the way you set up brakes if this feels in any way "fine" to you.

Ok, sorry about the confusion, bad advice not intended, my experience must be unusual. The v- brakes in question were the mini ones with a straddle wire across, if that makes a difference. Can't remember what model the levers were, as the bike is long broken up and gone, but they did work.

I think you're describing cantilevers there, so what you did was perfectly fine but your terminology is potentially misleading. V-brakes have a much greater mechanical advantage than calipers or cantilevers so they levers used with them have less mechanical advantage. I've ridden a bike with V-brake levers and cantilever brakes and I had to use all my strength to get any braking at all.
