If my head tube is 110mm measured with and including both (top and bottom) headset cups, how much threaded bit do I need protruding from the top of the frame in order to fit a headset? I know this probably depends a bit on the headset, so let's say something like a Shimano DX/XT or Ritchey?

Thanks.

The stack height of a 1 1/8th" XT M737 threaded headset is approx 35 mm of which the top 10mm ish is threaded.

So I would say your steerer would need to be approx 143mm (110+35-2mm clearance for non threaded seal at top of headset assembly) With the top 15mm min threaded.
