Depends on how much load you're carrying and if you're on tarmac all the time or maybe some light off road stuff?
Gatorskins in 28s will be fine if not too loaded up, I've just put on some Specialized Borough CX Pro folders in 32s which give an excellent supple ride and have a great puncture protection too.
