Project Bike- Rudi Altig

Hi, I'm after a bit of help. Recently purchased a white and black Rudi Altig racer for a project bike to do up. I want to keep it as original as possible as I like the features of old racing bikes. I wondered A) best way to remove the rust and re spray/colour bike B) best way to get stickers off and hoe to get new ones, I.e- graphics shop be acceptable etc? Ideally was after an 80's Peugeot blue and white but this came up cheap so I thought I'd see how I fair. Thanks in advance for any advise.
