I've seen many older frames with newer components, but have never seen a newer frame with old school parts. Has anyone done this?

Yep
, got rid of the black m*dern RF Evolve stuff and replaced it with some shiny silver Syncros, Ringle and Answer retrobits..
Currently also running m737 pedals instead of the white ones in the pic.
