Apologies for the delay and thanks for all of your advice and comments.
The couple in question celebrated their 60th Wedding Anniversary at the weekend and rec'd a letter of congratulations from the queen!
So I had chance to get the bikes out this weekend and take better pictures and get a grip with the kit on the two bikes.
The Vincitore Special is Kitted with:
Campagnolo wheels and skewers - the wheels are stickered with MA40, 630 / 27x1x1/4 and Mavic - both have IRC Tyres fitted
Cinelli Campus Handlebars
Shimano 105 Brake Levers
Shimano 600 Simplex Gears
Weinmann 605 Brakes
Stronglight Depose Pedal Stems
Strong (Japan) Seat stem
Madison Seat
Pedals state SP Eleven?
The bike is marked with 687 and 3 on the bottom bracket
The Frame looks immaculate
Let me know if I have missed any important parts.

Bayliss Wiley wheels with one Michelin Select and one world tour tyre
Shimano Simplex Gears
Mafac Dural Forge Brakes and Brake Levers
Stronglight Pedal Stems
Wellgo pedals
Brooks Champion Narrow B.17 Seat
There are also two spare handle bars and two spare wheels with race tyres - I will add the details shortly.

Under BB cable guides and the 531 sticker which looks like it has Ti logo puts it late 70 / 80's. The brakes are wrong "Handed" as the cable goes from the right side of the top tube to the left side brake calliper. They look nutted but wonder if it was made for recessed brakes.
