Advice on parts and components to get

Hi,
I'm a keen cyclist with very limited knowledge who has recently bought a nice chrome Duravia frame to build up with good quality parts, with the help of an experienced chap in a bike repair shop.
i'm looking to use the bike for touring and I'm hoping to find most of the parts myself.

Can anyone help me with a few questions ?

1. as it's such an old bike i have to get hub that can be taken down to 120mm and take an 8,9 or 10 cassette.
what kind should i be looking for and where should i look ?

2. what kind of wheels should i go for?

3. want to get STIs. should i go for double or triple speed ?

I'd appreciate anyone's suggestions.

For a tourer, you normally see triples up front to get the low gearing needed.

Modern tourers have 135mm spacing on the back, although my old galaxy frame has 126mm which i'm looking to respace to 130 or 135. Can't really help with the hubs for 120 but these often come recommended as touring wheels http://www.spacycles.co.uk/products.php?plid=m2b0s178p0 using the Rigida Sputnik rim (plan on getting these for my modern tourer build) on that link it's for 130 and 135 hubs, maybe someone else can advise on the 120mm.
 
Another re the wheels:

need to find out what size they were originally, current wheels are 700c and before that were 27".

have just googled the frame quickly and an old one came up that mentioned 650b (french i think), how old is the frame? might be worth posting some pics up here for someone knowledgeable in old frames to take a look.

i think the bike could be late 50s or 60s.
really hard to find out anything about Duravia bikes online.
i'll try and stick photos up.
 
if the wheels are 27" then 700c wheels should fit fine, although you'll need to drop the brake blocks in the calipers by around 4mm. You'll get a greater choice of wheel and tyre with a 700c size.
 
Could be wrong but I'd say you guys will struggle to get 8/9/10 cassette onto a 120mm hub... I know from experience that a 130mm hub can be respaced down to 126mm and still accept 9 speed with a little re-dishing... correct me someone?
