Are the spiders easy to get hold of? Bit of a grey area for me. :?

No, they're not too bad. There's a few XTR one's out there although they need specific rings. XT M570 will certainly fit and use regular 4 arm BCD rings, other Shimano spiders are also likely to fit. Middleburn do a spider that fits regular rings for about £40-50.
You'll also need a lockring. Middleburn one's do fit and are about £4.
