This is what's so great about RB! I never knew about the 6 speed conversion part for 7 speed shifters, I think I did read about the 8 speed UG at one point, I'd since completely forgotten though

Mine was not that Dura Ace set. It was a set of 8 standard UG gear plates all in silver, 14T standard UG thread locking cog, and came with with two sets of spacers: one colour for 7-speed and the other colour for 8-speed. It was a NOS standard Shimano set.

The 14t locking sprocket makes it a junior racing (restricted gear) set. Shimano continued to manufacture them in Uniglide long after their other systems had migrated to HG or IG.

I'd forgotten about these, but I recall that I had a couple with 15t or 16t top sprockets that I pulled apart to use the cogs and spacers on singlespeeds.

I've got a pair of whels with 5 speed UG cassette. Is this relatively rare?

Six and seven speed versions were certainly far more common. Cheaper 5-speed bikes stuck with freewheel hubs, and the higher end bikes that used freehubs tended to come with more gears.

The 1982 catalogue here lists a bewildering array of Uniglide hubs in 5, 6, and 7-speed options:

I'm restoring an 1987 Rossin, which has 1st gen Ultegra throughout, with the exception of the shifters, as someone has changed the original d/t shifters with friction Simplex, to use with the 6 speed Uniglide cassette that has been fitted.

It seems to me now, looking at these links, that this was probably 6 speed from the factory, and somehow, to take it back to catalogue correct, what I need is the SL-6400 d/t shifters, with the 6 speed insert?

I'm just trying to get my head around how the insert converts 7s to 6s? It looks like it sits in the cable guide on the outside of the shifter body, to effectively make the gear change travel a little longer? Ifso, I'm assuming that the shifters themselves are always 7s (with six indexed clicks), but that you simply don't get to use the 6th click, for the largest cog, when it's paired with a 6s block as the limiter on the rear mech simply prevents the shifter from being pulled any further (much like the hidden 7th click on original M732 series XT thumbshifters is never used unless you're pairing it up with an 8s block)?

In which, isn't the solution to my problem some standard SL-6400 d/t shifters, with a hand-made plastic insert (looks much like a security tab from a plastic drinks bottle could be adapted?) to run with the 6s Uniglide block already fitted?

The swap is quite simple. Take the axle out, use a 10mm Allen key to undo the freehub and it's a straight swap. There are no additional dust covers or spacers to fit.

Thanks for this suggestion Jonny - I've got a number of HG hubs here, so not short on HG freehubs potentially. I've actually never tried inter-changing a UG freehub for an HG freehub, so if the d/t shifter that I'm now trying to source doesn't quite work, I'll go with this, and simply convert it to 7s HG.

Would like to keep it original if I can though!

Nothing will beat the satisfaction of getting the actually part but I suspect the part is pretty rare to come by. I also imagined a bottle security tab as a possible makeshift part. Also, could try sleeving the cable at the shifter end with sheathing from an electrical wire to alter the pull ratio. You could try rerouting the cable through the derailleur to give you a different pull ratio if you cant find the adapter part. Haven't tried that myself but it may work and there is always the option of building it and using the friction setting until you manage to source the part.
