Here we go:
Chicken Balti Curry – 10 mins preparation, 20 mins cooking time
Serves 2
Ingredients:
½ onion finely chopped
1 clove garlic crushed
2 tsp whole cumin seeds
1 large knob of butter
2 inches fresh ginger root peeled and finely diced
small handful fresh finely cut coriander
1 desert spoon Patak’s Balti paste
2 choped chicken breasts
½ tin chopped tomatoes
2 tsp mustard seeds
(1 fresh green chilli finely chopped– optional if you want it hot)
Instructions:
• Fry butter, cumin, mustard seeds, garlic for 3 mins. Do not burn!
• Add onion, ginger and chicken, fry till start to brown (approx 5 mins).
• Add tinned tomatoes, balti paste and coriander (also chilli if you want it hot), fry for further 10 mins.
• Serve with basmati rice and/or naan bread.
Salmon Salad – 5 mins preparation, 15 mins cooking time
(serves 2)
Ingredients:
Pasta dish:
Large cup of pasta shapes (whatever floats your boat)
½ cucumber sliced
½ lettuce (whichever type you prefer) broken into bits
small tin of salmon or fresh cooked salmon fillet cut into small pieces (depends how posh you are!)
Dressing:
French dressing (olive oil/balsamic vinegar/herbs/salt – I forget the quantities – just do it to taste!!)
Instructions:
• Cook pasta, drain and leave to cool or soak in cold water to cool down
• Put pasta in a large bowl
• Add cucumber, lettuce and salmon, toss together
• Pour dressing over and serve
Salmon and roasted vegetables – 10 mins preparation, 45 minutes cooking time
Serves 2
Ingredients:
2 fresh salmon fillets
2 parsnips
2 carrots
1 large onion
1 medium sweet potato
handful cherry tomatoes
handful mushrooms
½ red pepper
½ yellow pepper
Instructions:
• Cut all veg into chunky pieces
• Place on a baking tray and drizzle olive oil all over them
• Put in 200 deg oven for 45 mins or till just turning brown
• Steam/microwave (depending how posh you are) salmon fillets (should only take a few minutes)
• Serve with bed of rice.
• Nice addition is chilli dipping sauce sprinkled over or balsamic vinegar just before serving
