Hi Trek_Y. The brakes (both deore v, and stx canti's) are still available.
Am sure I can find you a set of straddle wires for the canti's. If I do not have a set for them I would very very surprised. The v-brakes, again, am sure I could find a noodle or two as I once had oodles of noodles (sorry I've been wanting to say for some time now). Of course I will include these at no extra cost if I can find them.

Thanks James. Just waiting on new frameset to arrive to see which type will suit it best. Head says V's heart says canti's.

Found the cables for the stx canti brakes today but I could not find any noodles for the v brakes afraid.

Image of my camera phone so its not the best but gives a good idea of the cables with shimano on them.
