Both wheels spin nicely and to my eye have no wobble.
Seems to be double butted spokes front and rear too measuring 2/1.8/2 (ish)

I paid £150 for them last year for project and theyve gone unused

You can convert this hub to 20x110, just use the HUB420 adaptors. The 20x110 standard isn't the same as a boost 110mm wide hub, the adaptors add the 10mm.
 
I was looking at those and even tried a set of 20mm adapters from my local shop. They change it to 20mm but keep it at 100mm

According to that chart it seems you can go to 15x110 but not 20x110.

I’ve attached a photo of the ones my LbS gave me too

Nope, I've used these on tons of wheels, currently have these on two of my bikes, and frequently change the end caps to fit my different forks. They are the standard 20x110 which has been used for 25 years.

The end caps your LBS used must have been the HUB494 20x110 Boost end caps which are 5mm narrower as they fit a 110 hub and don't add the 5mm each side.

HUB441 - makes a 100mm hub 15x100: standard width end caps, 15mm.
HUB420 - makes a 100mm hub 20x110: +10mm end caps ( +5mm each side).

HUB1009-14N - makes a 100mm hub 15x110 Boost: which just adds 10mm to the right hand side to keep the disc mount at the right spacing, and the wheel needs to be re-dished.
HUB494 - makes a 110mm Boost hub 20x110 Boost: standard width end caps, 20mm.
 
Here, the standard non-boost 20mm HUB420 on the left, the Boost 20mm HUB494 on the right. The gold hub is a standard 100mm hub, and then with the HUB420 adaptors becomes 20x110. Your LBS is measuring a Boost 20mm endcap in that photo.

So... I've bought a new wheelset anyway - it came up locally cheap. I haven't fitted it yet but it came off a fork I have (Bomber 66RC) and it had the 20x110 front and 9x135 rear I needed

But - how does the HUB420 add 5mm per side but the HUB1009 only add 10mm to one side? Is there 2 110mm standards?

Yes, there's the original 20x110, and then theres the newer Boost 20x110. They're both the same size axle, but the boost one moves the disc mount 5mm further out, meaning the spoke flanges can be further out - a boost hub. So a standard 100mm hub with 20x110 end caps will still fit, but you'd need to add a 5mm spacer to your disc rotor.

That HUB1009 could have just been +5mm each side but you'd need a disc 5mm rotor spacer too. By just adding 10mm to the right hand side, the disc is in the correct position already, but you then redish the wheel to centre it.
