is it easy to replace cantilevers with V-brakes?

Can you use the same brake levers? Is it just a matter of taking off the cantilever arms are sticking on V-brakes in their place?
 
The v brakes will mount the same as cantis on the frame/ forks - the problem is the levers pull different amounts of cable, so you wouldn't have much luck...

Back in the day you could get a device called a travel adjuster that adapted the canti lever brake pull to v, and I believe also used on road levers (sti) to allow them to work on v's (cantis can be used with sti levers as-is)

Personally I have never mix-and-match them nor used the converters.
 
I have a pair of Avid 1.9 levers which have an adjustment in the cable housing which - I think - allows you to use either type of brake . Maybe someone else can confirm this ? Mike
 
You might find cable routing for the rear isn't straightforward. Any cable guides will be designed for centre pull whereas a V is some way off to the side. I had to run a length of outer all the way from the bars to the noodle and cable tie it to the top tube.
