Retro Winter Tyres and Tubulars?

can anyone point me the right direction in the way of traditional gum wall, decent tread, winter tyres and tubulars, please? i've still to get hold of a pair of shimano 8 speed wheels for the eddy merckx that i'm building and depending on what tyres are available will decide whether i go for sprints or wired-ons.

Panaracer Paselas have remained little changed superficially in 20-odd years as a training tyre.

Challenge do some tan-wall tubulars including the Pariji Roubaix - not cheap though

Second that on the Panaracer tyres!

These tyres seem to be very puncture resistant and very grippy.

When I go to Skeggy again I'll see about getting a pair
