Getting a bit confused as to why all this supposed NOS stuff is being priced out of the reach of most...

at the end of the day it's a crankset and bottom bracket...

Yep, noticed that :) and also the myriad of tiny surface scratches - NOS - not convinced at all by the validity of many of these claims - let's see if there's any takers at that price, i'd be amazed.

The add does say however the NOS = New Old Stack

It's crazy really, you can buy a whole bike in top drawer condition for that money. But to come up with that as a BIN price there must some experience or knowledge that there are people who are nuts enough to pay it. Why go through the hassle of pricing something so out of reach to most people if there wasn't the possibility it would sell?
