What original 8speed chain should I be on the look out for to complete my M900 groupset? Also, what cables should I use to be true to the original spec? Any help greatly appreciated.

Designated XTR chain was made under the code CN-7401 (same chain was used with Dura-Ace). Nigh on impossible to find it as NOS now, I might be tempted to fit some ultralight fancy 9 sp. new one (maybe gold-Ti coloured) instead. HG91 suits it fine too, as it's still a top-end 7-8 sp. version, yet still too pricey for what it's worth, though.
