are the king hubs disc?

Nope - just the classic non disk type.

Do you know the brand of the cassette? Action-Tec, Goldtec?

I think it may be Zero but no entirely sure!!

Just out of curiosity, how do you shim down something?

Hole in steerer crown for 1 1/4.

Shim that slides over 1" steerer.

Shim and steerer fit in 1 1/4 hole.

Done!
